Up to now, we haven\u2019t had time to experience or even put into practice many of the things we thought were going to be trends in the gastronomy industry, although there is a new one that we added during lockdown: live broadcasts on Instagram of recipes from top chefs. We\u2019re going to skip that one for now, though. So, what were the other gastronomy trends for 2020?<\/p>\r\n\r\n\r\n\r\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" class=\"wp-image-46987\" src=\"https:\/\/jeanleon.com\/wp-content\/uploads\/2020\/07\/healthy_interior.jpg\" alt=\"\" \/><\/figure>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\"><strong>The unstoppable growth of healthy food<\/strong><\/h2>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">We saw out 2019 and rang in 2020 with a trend that hasn\u2019t stopped growing in popularity: eating well and healthily. The healthy food trend is more than just a fad, though, with healthy eating and living a healthy lifestyle having become fundamental for many people. We\u2019re seeking out organic products more and more, especially those produced locally, and we\u2019re increasingly eliminating or limiting consumption of processed foods or foods with additives. While 2019 was the year of nootropic foods that promote cognitive function, 2020 has to be the year of anti-aging foods with powerful antioxidant properties, such as broccoli, tomatoes, extra virgin olive oil, nuts, grapes, garlic and black garlic, dark chocolate (at least 80% and with no added sugar), legumes, cinnamon, and red fruits.<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\"><strong>Obsession with fermented foods<\/strong><\/h2>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Kimchi, sauerkraut, kombucha, kefir&#8230; These were all names you probably weren\u2019t familiar with just a few years ago, whereas today they\u2019re now part of our vocabulary. Fermented foods will stay on the list of the trendiest healthy foods this year.<\/p>\r\n\r\n\r\n\r\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" class=\"wp-image-46991\" src=\"https:\/\/jeanleon.com\/wp-content\/uploads\/2020\/07\/food_2.jpg\" alt=\"\" \/><\/figure>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\"><strong>Even fast food goes gourmet<\/strong><\/h2>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Another trend that was already showing promise in 2019 was gourmet fast food. This was thanks, in particular, to the food trucks that were a firm fixture at the majority of events and markets all over the country. Sandwiches made with choice cuts of meat such as Iberian pork secreto are just one example of the high-quality fast food with a gourmet touch that was tempting gourmands\u2019 taste buds.<\/p>\r\n\r\n\r\n\r\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" class=\"wp-image-46983\" src=\"https:\/\/jeanleon.com\/wp-content\/uploads\/2020\/07\/jackfruit.jpg\" alt=\"\" \/><\/figure>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\"><strong>Is it time for jackfruit\u2019s day in the sun?<\/strong><\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\"><strong><br \/><\/strong>This superfood is used frequently by vegetarians as a meat substitute, and even though things were on the up for jackfruit in 2019, it didn\u2019t end up becoming really established. Still, <a href=\"https:\/\/eu.wholefoodsmarket.com\/?destination=www.wholefoodsmarket.com\/\">Whole Foods<\/a>\u2019 annual report says that starting this year, it will go global like coconut or papaya once did. We\u2019ll see!<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\"><strong>Getting back to basics<\/strong><\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">To finish, it\u2019s worth noting that more traditional cuisine will be making a comeback. The trend will no longer be looking for original recipes, but rather for those that have stood the test of time. Signature dishes, but strongly rooted in old favorites. There\u2019s no need to innovate, but rather doing well what you already know and doing it with a good product.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">What do you think?
