In today\u2019s context of consumer trends and considering the global economic situation, it is extremely difficult to give a simple answer to this question. However, as every year, I have followed and read a wide range of articles on gastronomic trends for 2026 and perhaps, as a well-known journalist once said, I can \u201cshed a little light in the darkness\u201d.<\/p>\n

SUSTAINABILITY: the alliance between flavour and awareness<\/strong><\/h2>\n

A concept we have seen in recent years and one that is becoming firmly established as one of this year\u2019s key pillars. The fight against food waste. A reduced ecological footprint. Local products and organic farming\u2026 Three out of four consumers now take responsible practices into account when choosing a restaurant, and this clearly sets the direction forward.<\/p>\n

At home, we increasingly understand that cooking consciously is a form of respect for the planet.<\/p>\n

We are also seeing a gradual return to the use of animal fats in cooking as an alternative to certain industrial oils, as well as for nostalgic reasons when it comes to flavour, promoting the concept of full utilisation of the animal (nose to tail<\/em>).<\/p>\n

The Jean Leon winery and its wines are fully aligned with sustainability, implementing practices that go beyond organic farming. The transition to regenerative viticulture, conscious water use and the production of our own energy are clear examples of this commitment.<\/p>\n

FIBRE takes the lead over PROTEIN<\/strong><\/h2>\n

After several years in which the search for protein-rich foods dominated trends, consumers\u2019 intestinal and digestive wellbeing is taking centre stage this year. Cassava, chicory and konjac are enriching breads and pasta, which, together with fermented foods, help take care of gut health.<\/p>\n

In the search for protein, the industry must focus on achieving less processed options, especially those of plant origin.<\/p>\n

And what about wine?<\/strong> Red wine, especially when consumed in moderation, can offer benefits for digestive health. The polyphenols found in red wine, such as resveratrol, can act as prebiotics, encouraging the growth of beneficial gut bacteria. In addition, red wine may stimulate the production of digestive enzymes and help with the digestion of fatty foods. A glass of our 3055 Petit Verdot \u2013 Merlot<\/strong>, or Vinya Le Havre<\/strong>, with meals can support this process.<\/p>\n

\"\"<\/p>\n

AI takes over the kitchen<\/strong><\/h2>\n

Especially in professional kitchens, where it is used to design menus or even anticipate consumer trends based on the analysis of customer behaviour. It is also being used to create new flavours.<\/p>\n

While robots and touch screens are already part of domestic kitchens, professional kitchens are now incorporating 3D printers capable of transforming ingredients into edible structures with shapes and textures identical to the originals they recreate.<\/p>\n

Artificial intelligence is also present in many of the research projects in which the Jean Leon Winery is involved, whether to optimise water use or to minimise the use of copper as a phytosanitary product. A valuable tool that helps us offer healthier grapes and higher-quality wines year after year.<\/p>\n

Flavours from AROUND THE WORLD<\/strong><\/h3>\n

While the influence of Middle Eastern and Far Eastern cuisine \u2014 especially their spices \u2014 continues to be significant, this year different varieties of corn will highlight another side of Latin American cuisine. However, the real novelty will be African cuisine, featuring ancient grains such as fonio and Ethiopian breads.<\/p>\n

Remember that white wines such as Jean Leon Nativa Xarel\u00b7lo<\/strong>, 3055 Chardonnay<\/strong>, or 3055 Ros\u00e9<\/strong> are always the best companions for these exotic and spicy flavours.<\/p>\n

SWEET yet HEALTHY<\/strong><\/h3>\n

Consumers do not want to give up desserts or sweets in general, but we want them to be natural and minimally processed. As a result, honey, fructose and maple syrup are gaining popularity. Quality and awareness are winning when it comes to sweetening our lives.<\/p>\n

A very SPECIAL YEAR<\/strong><\/h3>\n

In 2026, the FAO has declared the International Year of the Woman Farmer, a well-deserved tribute to all the women who work in and transform agriculture. Many of the new projects emerging in the agricultural world are led by women, and at Jean Leon \u2014 a winery with a strong female presence in key positions \u2014 we celebrate this milestone with great pride and will mark it with new projects and products.<\/p>\n
